Jasmine Tea traces its origins to the Chinese Song Dynasty, 800 years ago and is a traditional tea to be served to welcome guests.

Green tea grown at high elevation is harvested in spring and stored until early summer, when Jasmine flowers are in bloom.  The flowers are picked early in the day when the petals are tightly closed and kept cool until nightfall.  Alternating racks of flowers and tea are left overnight and the night-blooming Jasmine flowers open and infuse their fragrance into the tea.  This process can be repeated multiple times for higher grades of Jasmine tea.
